KASTAN: where history, sustainability and delicious food come together

KASTAN is your new favorite place for a delicious lunch, dinner or drinks! This cozy restaurant is located in the middle of a beautiful chestnut forest next to Hoofddorp Station. Farm shed with a story

The location has a rich and special history that is closely intertwined with the history and growth of the polder. The wagon shed where KASTAN is located was still on the Hoofdvaart a few years ago. It was built shortly after the reclamation in 1852, but when exactly is not entirely clear. However, initials scratched into the wood show that the barn was already there in 1880. Until a few years ago, it stood on the land of the Adolfshoeve on the Hoofdweg in Lijnden. In 2022, the barn, which was completely dilapidated, was demolished, moved to Van Heuven Goedhartlaan in Hoofddorp and carefully rebuilt there.

Sustainable and modern

Owners Dennis and Jeroen have a sustainable vision on the catering industry and want to further this vision with KASTAN. The fact that sustainability is important to them became clear, for example, during the construction process of the restaurant. They reused as many materials as possible. From the authentic farm stones to much of the wood of the pillars, roof trusses and window frames. This sustainable approach is in line with their sustainable vision, but also ensures that the historic appearance of the barn is preserved. Dennis and Jeroen also try to run the restaurant as sustainably as possible. There are 36 solar panels on the roof and they store the excess electricity generated in a smart battery. Surprising, local and seasonal

At KASTAN it's all about local and seasonal food. These have been sprayed as little as possible with pesticides. The collaboration with Lolita from Teler made Farm, an organic farm in Haarlemmermeer, is very important. Chef Caspar and his team put together KASTAN's menu based on local products from Boerin Lolita. They are inspired by the polder history of Haarlemmermeer. For example, order the sashimi sea bass in advance, the dual-purpose beef cheek as a main course and a delicious chestnut bonbon from Patisserie Wesley Borstel. The varied menu has something for everyone!

The Arie Keppler prize is awarded to projects that are leading in the field of architecture, urban planning, landscape and heritage. KASTAN won in the category Pioneers and they walked away with the audience award! The prizes were awarded on October 11, 2024.
