How does an eel smokehouse work? 

Fresh eel is smoked every day at Dirk and Anneke's eel smokehouse. The eel is grown in pure water and kept in buns. These hang in the Ringvaart. The eel is then cleaned and salted. Then the eel is rinsed and strung on pins to dry. In the meantime, the smoke boxes are heated with kindling wood. Is the smoke box at eighty degrees? Then the oak wood comes on the fire and the smoking can begin. Dirk and Anneke only use oak wood to smoke the eel. This creates a specific smoky taste!

The eel smokehouse has a spacious parking lot, making it easy to reach the shop by car. But you can also take a seat at one of the picnic tables along the waterfront or on the cozy terrace. Because the eel smokehouse is located on the Westeinderplassen, Dirk and Anneke Eveleens' eel smokehouse is also easily accessible by boat.
